Brief Introduction to
Huang Shan Mao Feng Green Tea


Huang Shan Mao Feng tea, literally as “Yellow Mountain Fur Peak”, is a world-famous green tea produced in Huang Shan (Yellow Mountain) of China’s Anhui province. The tea is one of the most famous teas in China and can almost always be found on the Chinese Famous Tealist. The tea is grown near Huangshan Mountain, which is home to many other famous varieties of green tea.

This traditional tea has a mild and slightly sweet flavor perfect for those who want a high quality green tea without a bitter taste. Take time to enjoy the magnolia aroma and light apricot tea color.

There are many types of Mao Feng style tea in China, but Huang Shan Mao Feng is considered the very best. Our Huang Shan Mao Feng tea is completely hand processed using traditional techniques to craft an incomparable tea first made famous during the Qing Dynasty (130 years ago). Most Huang Shan teas, even the best grades are now made by machine, because the pure floral aroma is preferred to the lightly roasted aroma that comes from being fried in a wok. Our tea masters are very experienced in handmaking this tribute tea. This tea is often given as a national gift to other countries during foreign visits.

Huang Shan is very famous in Chinese tea history for inventing hand fried loose leaf teas. Before this, tea was compressed into cakes. This signifies a big change in the way that tea was processed. This tea is made in high mountains, 1000 meters above sea level in a wild-grown countryside. A forest surrounds this organically grown tea garden. Since this tea is from a high mountain, the picking season starts in early April while the weather is still cold. Tea pickers pluck 1 bud with 1 tender leaf. Both the bud and the leaf should be the same size, if they are not, it is a sign that the leaves are older. The leaves are brought back to the factory and are lain aside to breathe for a couple of hours, to move out a bit of moisture. The tea masters fry the tea by hand in a special wok, which is deeper than most. About 200-250 grams of tea are fried at one time. The tea leaves are scooped up 20-25 cm above the wok to help cool the tea down, before they gently sprinkle the leaves back down. This must be repeated 50-60 times every minute.

The tea is then placed on a bamboo tray which is placed above charcoal covered in ashes, so there is no smoke. They will roast the tea for 2 times. The first time is for a couple of hours at 60-90 Celsius, more ash is added on if the temperature is too hot. The tea is given an hour to rest before they roast it once more. This time for a much shorter amount of time, to make sure most of the moisture is gone.

Since Huangshan Maofeng tea is wok fried and roasted by charcoal, the tea color is a little yellower than others. The dry tea leaves are a yellow hue, reminiscent of ancient ivory. The infused tea is very clean with more sweetness than the non-handmade one. The special processing allows the leaves to retain their original shape which is the character of Mao Feng tea. It is common to describe this shape as a bird’s slightly opened mouth or the look of a beautiful Chinese orchid.
